Originating from the Kyoto area and made popular by the famed Nobu Japanese Restaurant, Gindara Saikyo Miso is a classic dish. 

Japanese Sablefish (Gindara) is marinated in saikyo shiro miso, a local Kyoto miso that is sweeter than most kinds of shiro miso. It contrasts perfectly with the savoury, oil Gindara and creates a rich, yet elegant dish.

  • The fillet is frozen and must be defrosted before cooking
  • To prepare, wipe the excess miso off to prevent burning. Bake fish skin side up for 20 minutes at 200 degrees.
