Hakko Nukadoko is a fermented bed of rice bran, made for pickling vegetables. It is fermented by natural lactic acid bacteria and yeast, which are highly effective in preventing the growth of bacteria. The pickling process can take anywhere between 10-24 hours and is dependent on the size of the vegetable as well as the temperature.

Caring & Maintenance for your Nukadoko:

  • Once opened and used, it only needs to be stirred once a week 
  • If it becomes too watery (due to the moisture from the vegetables), you can drain the water off or absorb it with a clean sponge
    or kitchen paper
  • Keep your Nukadoko out of direct sunlight, high temperature and
    high humidity. It is best kept in the refrigerator
  • If cared and maintained well, Nukadoko can be kept well past the best before date stated on the package
