Panko is a Japanese-style breadcrumb, made from bread without crust, and is lower in calories, fat and sodium than regular breadcrumbs. Panko flakes are larger, providing a more defined texture than regular breadcrumbs. They are used for coating deep-fried food to give a light, crunchy bite.
Commonly used to make tonkatsu, croquettes, and even to bind meatballs.
