Shishamo is a type of smelt fish native to Hokkaido, Japan. It is often enjoyed with its flavourful roe still intact to complement the mild, delicate flesh of the smelt. It is traditionally served grilled or fried whole and pairs great with ponzu sauce or a hint of lemon.
